Custom stills, with components sourced worldwide make for a unique distilling process. With over 30 years of -bar, cocktail, food, liquor, hospitality- experience between them, their knowledge and passion for creating fine quality liquor is discernible in every bottle.

Based in Vancouver, BC, the they worked from the ground up to create a distillery experience emblematic of their beautiful West Coast locale. 

A true entrepreneur, Taylor Dewar has tried his hand, and succeeded, in numerous industries, from web design, to networking, to music venues, but his passion lies the art of distilling. Hailing from Calgary, Taylor’s nine years in food and beverage service has strengthened his knowledge of an ever-growing industry. Skilled his still design and construction, he has honed the art of medium scale home distilling. Always the innovator, it is exciting to see what Taylor will come up with next!

Born and raised in the Lower Mainland, Maxwell Smith has a strong appreciation for all the West Coast has to offer. A craft distiller with eight years of experience in the food and beverage industry, he has helped build restaurants from the ground up. He has a knack for developing menus and flavours for a vast array of tastes; a skill he uses artfully in the distilling process. Maxwell is a Simon Fraser University graduate and participated in Red Racer Brewing's course on the science and management of the alcohol industry.

Calgary-native Christopher Konarski has been working in professional kitchens since the age of sixteen. A trained culinary professional, Christopher graduated top of his class at Le Cordon Bleu and has worked in 1-star, 2-star, and 3-star Michelin restaurants. Seven years living and working in France has given him unparalleled experience, complementing his extensive knowledge of flavour. Well-versed in the Eau de Vie distilling process from the European Alps, he offers a vast knowledge of traditional techniques and flavour profiles.
